New Diner at SXU

Starting this Fall, Country House Restaurant replaces Chartwells as Saint Xavier’s new and official diner. Country House Kitchen is a family owned operated restaurant located in Alsip. The Xavierite interviewed Paul Boundas, Country House Restaurant owner, to know more about SXU’s new vendor.

“Country House Restaurant is all about home made, we do all our own scratch cooking, we don’t rely on any frozen or processed food,” said Boundas.

Country House Restaurant has done previous catering at SXU and is involved in the community near by. The restaurant has also worked with high schools such as Brother Rice and Oak Lawn High School.

According to Boundas, SXU and Country House Restaurant have been working together to develop a new program before the Fall semester started. He told the Xavierite he is very pleased and appreciative to serve the SXU community.

“It’s an awesome opportunity for us, it’s a great fit. Our restaurant is four miles away so we serve the same community . . . for us, it was an opportunity to do what we do at a college level which we’ve never had before,” said Boundas.

There has been many positive responses from students regarding the new food.

“I like the new food. There’s a lot of choices and everything tastes better. [All the foods] in the diner are healthier choices,” says Jordan Gray, senior SXU student.

“It’s more fresh. I like that they have spinach now, they have different variety options [for the salads]. And then they have more fruit . . . I just feel like it’s better quality,” said Jillian Doan, sophomore at SXU.

Another incorporation is Cougar Fuel, where Country House Restaurant will serve food focused on athletes. It is located in the Shannon Center. Michael Lafenhagen, who is a football player at SXU says this addition is great for the athletes.

“I really like Cougar Fuel. It’s a really healthy place to eat at. They sell a lot of wraps, smoothies and power drinks for post and pre workouts if you are going to exercise. Or you can get a meal too, they have all kinds of wraps, [vegan, meat, whole],” said Lafenhagen.

In addition, the restaurant will relaunch Gilhooley’s in mid-September with a new menu including burgers, salads and entrees. Gilhooley’s will also offer employment to SXU students.

For last, Boundas invites all SXU students to try the food. “We take a lot of pride in what we do. We are their to listen to the students and create the menu [for them]. We are very proud of the food that we have. Come on in and try it, you won’t be disappointed!”
